In questa versione utilizzo la farina di riso adatta per chi è celiaco, infatti la ricetta è totalmente Gluten Free. Se volete fare la versione tradizionale, potete sostituire la farina di riso con quella 00’ senza cambiare la dose.
Ingredienti:
- 300 g di farina di riso
- 3 uova
- 50 g di zucchero
- 2 cucchiai di Vin Santo
- 30 ml di olio di semi
- 1 scorza d’arancia
- Olio di semi per friggere q.b.
- Zucchero a velo q.b.
Preparazione:
Prima di tutto creare una fontana con la farina di riso e al suo interno ci aggiungiamo le uova, lo zucchero, il Vin Santo, l’olio di semi e la scorza d’arancia grattugiata. Mescoliamo bene gli ingredienti che si trovano all’interno della fontana fino ad ottenere un composto omogeneo. A questo punto amalgamiamo (sempre con l’aiuto della forchetta) la farina al composto in maniera graduale. Quando quest’ultimo inizia a diventare un impasto, possiamo iniziare ad impastare con le mani.
Lasciamo riposare per 30 minuti. È arrivata l’ora di dar forma alle nostre chiacchere: stendiamo l’impasto molto finemente e tagliamo tanti rettangolini con il tagliapasta. Per dare la forma tipica delle chiacchere, si fa un taglietto in mezzo, oppure si fa un taglio che parte dal centro fino alla base del rettangolo dando una forma che richiama molto quella dei pantaloni. A questo punto possiamo friggere in olio di semi bollente. Essendo un impasto molto sottile, basterà pochissimo tempo per la cottura quindi attenti a non bruciarli! Come tocco finale, lo zucchero a velo che non può mai mancare.

Il mio intervento in questo tipo di ricette, più che a commentare il contenuto nutrizionale, sarà volto a fare informazione sul nebuloso e magnificente universo del “senza glutine”.
Data l’ampiezza dell’argomento, mi permetto di dilungarmi aggiungendo i
tasselli via via nelle prossime ricette gluten-free che proporremo.
Quindi oggi partiamo dalle basi.
Cos’è il glutine?
Ormai tutti lo associano ai farinacei ma è contenuto anche in alcuni
prodotti industriali, anche i meno sospetti, capiamo meglio perché. È un complesso proteico formato principalmente da due proteine, gliadina e glutenina, che si legano in presenza di acqua. È per questo che l’impasto del pane o di qualsiasi altro prodotto da
forno diventa più elastico a forza di impastare, si sta favorendo la
formazione del glutine. Questo elemento è fondamentale per la lievitazione,
in quanto la sua elasticità permette l’imprigionamento dei gas prodotti
dai lieviti durante la fermentazione degli zuccheri in tante piccole
cellette che, una volta cotto l’impasto, determinano l’aspetto alveolato
(tutto bucherellato) al suo interno. Perciò, dal punto di vista di un panettiere, più glutine contiene una farina tanto più è di qualità.
Curiosità:
questo complesso proteico è l’ingrediente principale del seitan, uno
dei prodotti maggiormente sfruttati da chi segue un’alimentazione
principalmente vegetale.
Cos’è la celiachia?
È una malattia mediata dal sistema immunitario in risposta all’ingestione di glutine. Anche se solitamente viene diagnosticata durante l’infanzia e l’adolescenza, in realtà può svilupparsi a qualsiasi età, quindi d’accordo che vostra nonna non è più lucidissima e vi chiama col nome del cane, ma per una volta potrebbe averci visto giusto. È una malattia a eziologia multifattoriale, ovvero ci sono più concause. Le principali sono: predisposizione genetica e disbiosi intestinale. In particolare, sembra che il forte stress procurato alle pareti intestinali da malattie temporanee, antibiotici, alimentazione scorretta e altri tipi di accidenti, causino una riduzione nell’impermeabilità della barriera fornita dall’unione del microbiota (alias flora intestinale) e delle cellule della mucosa intestinale.
La permeabilità permette alle proteine del glutine non digerito di venire a contatto direttamente con il sistema immunitario,
ovvero con le cellule che se sono predisposte geneticamente riconoscono
la molecola come estranea e potenzialmente una minaccia, per cui producono degli anticorpi per contrastarla. Si attiva una risposta immunitaria molto incasinata (bisogna
ammetterlo, non siamo proprio proprio una macchina perfetta) che finisce
per danneggiare i villi intestinali, con conseguente malassorbimento
dei nutrienti e una sintomatologia che può restringersi all’area
intestinale (diarrea, stipsi, dolore addominale ricorrente…), ma può
anche essere sistematica (mal di testa, vari disturbi secondari alla
carenza di nutrienti, rallentamento nella crescita…).
Come si diagnostica?
Innanzitutto ricordo che, per avere una diagnosi ufficiale, bisogna rivolgersi a un gastroenterologo che procederà, qualora lo ritenga utile, a prescrivere gli accertamenti necessari. Per maggiori informazioni relative al tuo caso personale rimando al medico di base o pediatra di libera scelta. Gli esami a cui ci si deve sottoporre sono di diverso tipo:
- Test genetici: si valuta la predisposizione genetica tramite l’analisi del “complesso maggiore di istocompatibilità”, che è un po’ come la nostra impronta digitale sotto forma di DNA e che negli esseri umani, abbreviata, è detta HLA. Le due sequenze indagate sono la DQ2 (positiva nel > 90% dei casi) e/o DQ8 (positiva nel 5% dei casi). La positività genica non è sufficiente a fare la diagnosi di malattia celiaca.
- Test sierologici: sono poco invasivi perché si fanno sul sangue e, detto in modo semplice, vanno ad analizzare la presenza di anticorpi specifici per la molecola del glutine e per l’enzima “transglutaminasi” che, in condizioni normali, digerisce il glutine. Questi test vanno eseguiti sempre durante una dieta libera e mai in corso di dieta priva di glutine o in corso di terapia immunosoppressiva, altrimenti si rischia un risultato fintamente negativo.
- Biopsia duodenale: necessaria per la valutazione istologica, cioè al microscopio, dell’integrità della parete intestinale. È volta a verificare l’eventuale atrofia dei villi o altri segni di danneggiamento della mucosa intestinale. Sarebbe il gold standard (non plus ultra) per la diagnosi, ma purtroppo l’atrofia della mucosa intestinale può avere anche altre cause.
- Gluten Challenge: è una prova empirica e, lo ammetto, un po’ sadomaso,
ma necessaria qualora la persona abbia già intrapreso la dieta priva di
glutine, oppure in età pediatrica in cui si preferisce non sottoporre a
biopsia. Consiste nel sospendere completamente l’introduzione di glutine per un dato periodo,
verificare l’andamento della sintomatologia che può migliorare oppure
no e, infine, sotto il controllo medico reintrodurre il glutine nella
dieta un po’ per volta per osservare un nesso causa-effetto tra
assunzione di glutine e sintomatologia.
Come si cura?
Dalla celiachia vera e propria non si potrà mai guarire e non
ci sono, per ora, medicine da prendere per poter comunque mangiare
qualunque cosa senza stare male. Per farla breve, l’unica terapia efficace al 100% è la dieta completamente priva di glutine,
che significa che la contaminazione dei cibi e degli utensili con
minuscole tracce di glutine che può avvenire durante la lavorazione non è
ammessa.
Ma allora cosa può mangiare una persona affetta da celiachia?
