Da cosa è dovuta la sua colorazione?
La colorazione del cioccolato Ruby è 100% naturale senza l’aggiunta di coloranti o aromi artificiali. Il colore rosa è data da una fava di cacao molto particolare che prende il nome di “fava di cacao rubino”, ed è una varietà botanica che possiede tutte le caratteristiche necessarie per essere trasformata in un delizioso cioccolato di color rubino, mentre i metodi di produzione sono ovviamente tenuti segreti. La Barry Callebaut il 5 settembre 2017 presenta per la prima volta questa nuova tipologia di cioccolato durante un evento organizzato a Shanghai.
